Spiced Pineapple Rum Sour


  • 2 oz Spiced Rum
  • 3/4 oz Lime Juice
  • 3/4 oz of Pineapple Syrup (see recipe below)
  • 15 drops of Blue Coast Northern Attitude Maple Bitters
  • 1 Egg White (substitute aquafaba for vegan)


  1. Add all ingredients into a cocktail shaker and shake without ice.
  2. Fill the shaker with ice and shake again for 15 seconds.
  3. Strain over ice into a rocks glass.
  4. Garnish with pineapple leaf and/or dehydrated lime.

Pineapple Syrup

  • 1 Fresh Pineapple
  • Caster sugar
  • Water
  1. Chop your fresh pineapple pieces and weigh.
  2. Add half the weight of your pineapple in caster sugar to a pan and half the weight of the pineapple in water to the pan.
  3. Place on medium heat and bring to a boil before letting it simmer. Using a fork press down on the pineapple pieces to release all the juice and continue to simmer until you reach a golden syrup colour and texture.
  4. Remove from heat and strain into a container (mason jar).
  5. Keep in fridge until ready to use.
